Venna Appalu (Sweet with rice flour)

Venna Appalu is a vary tasty Sweet normally made for Anjaneya Pooja. The Exterior would be crisp but soft interior.
One must be careful with this as this some times turns very hard, if not prepared properly. This can be made very quickly too. may take about 15 min. 
The trick is that while preparing the dough, the ghee should be just enough. start with 2 spoons of ghee and add more ghee as required. If ghee is less, sweet will be hard. If more, will not hold in the oil. 
You can add upto one spoon of Milk, but not required. This depends on the floor.
The Oil should not be too hot. if more heat, the inner will not be fried. If not enough hot, the sweet will soak oil.
Enough Instructions and now for the preparation method.

Ingredients

  • 1 cup rice flour
  • 1/2 cup grated coconut
  • 1 cup grated Jaggery
  • 2 tbsp ghee
  • Few cardamoms
  • Oil for deep frying
  • 1 Tbsp Milk (optional)
Method of Preparation
  • Boil one cup water. 
  • Add Jaggery. 
  • When it melts add ghee, grated coconut and rice flour and mix will without farming lumps. 
  • grease your hand and make small lemon sized balls of the dough. 
  • Lightly flatten on top and place carefully into the hot oil.
  • Deep fry on medium flame till they attain a light brown color. 
  • Do not touch the appalu till they attain a light brown shade. 
  • Use the ladle to move them or flip them over to cook the other side only after they attain a light brown shade. Continue to deep fry till they reach a deep brown shade on a medium high flame but not high flame.
There is another method to make this with Sugar. The difference is only till making the dough. however, the precautions remain as is. with Jaggery, you need to use hot water. Not required for making with sugar.

  • Rice flour – 1 1/2 cups
  • Sugar – 1/2 cup
  • Ghee – 2-3 tbsps (melted)
  • Cardamom powder – pinch (optional)
  • Oil for deep frying

Method of Preparation

  • Melt ghee and allow to come to room temperature. In a bowl, mix rice flour, sugar and ghee till it forms a smooth dough. (Initially add only 1 tbsp ghee and mix. If it appears Coarse or forming lumps, add another 1-2 tsps ghee and mix. ) Add ghee only till the dough is soft.
  • Heat Oil in a Vessel on medium flame. 
  • While the oil is heating up, grease your hand and make small lemon sized balls of the dough. 
  • Lightly flatten on top and place carefully into the hot oil.
  • Deep fry on medium flame till they attain a light brown color. 
  • Do not touch the appalu till they attain a light brown shade. 
  • Use the ladle to move them or flip them over to cook the other side only after they attain a light brown shade. Continue to deep fry till they reach a deep brown shade on a medium high flame but not high flame.
